This meat didn’t even need salt, perfect in that regard which is rare.
No cheese, a notable miss. Please adjust this dish to add in the future.
Perfect capers, insofar as quality, freshness and application.
No onions, which is fine plenty of the time.
No pepper available, could have used a turn.
The arugula was lemony and perfectly fresh. A little sparse, but otherwise a top notch arugula treatment.
The meat was a perfect temperature, great cut of meat and not stringy. I’d say it was an appropriate portion and the plating was very nice.
The aioli was quite garlicky but not unacceptable. The drizzle just slightly on the overzealous side
The crostini was useless, too hard to do anything with other than break car windows. I guess that’s what “artisans” must do with it?
Overall dish has a slightly acidic finish, likely from the citrus oil as advertised.
